Hey guys! I hope you all had a great weekend! I have had a really busy week with work so things around the blog have been a little slower than usual. The next couple of weeks are looking pretty busy too with summer camps and more work commitments but I am hoping to keep up with a couple of posts per week. I am also working on a new summer decluttering plan that will begin next Monday and run through Labor Day, so if you are wanting to “lighten up” a bit this summer, I hope you will join me! {Don’t worry – it won’t be anything too time consuming!}
So speaking of lightening up, I have a healthy summer smoothie recipe to share with you today. I have been making a ton of breakfast smoothies lately and this strawberry peach smoothie has been a favorite of mine. There are a few different variations that I have tried so don’t be afraid to play around with it a bit to find your personal taste preference.
- 1 cup orange juice or almond milk
- ½ cup vanilla or strawberry Greek yogurt
- 1 peach, peeled and sliced {or equivalent in canned peaches}
- ¾ cup strawberries {I like to freeze mine}
- 3-4 ice cubes
- 1 tablespoon chia seeds {optional for extra nutrients}
- honey to taste if additional sweetening needed
- Mix the first 6 ingredients together in a blender until smooth. Stir in some honey for additional sweetness if desired.
The kids like it best with the orange juice but I usually stick with the almond milk to cut down on the sugar and calories. I like my smoothies thick and creamy so, if I remember, I will freeze my fruits the night before. This recipe also works great for making popsicles – just make sure to use the orange juice rather than the almond milk and leave out the ice cubes. Pour it into popsicle molds and you are good to go!
