Hayrides, visits to the pumpkin patch, bright colored leaves, and fall treats abound during these crisp, cool months. Today I’m going to be sharing a recipe for one of my favorite fall treats–pumpkin cream cheese muffins.
Need treats for a fall party? These are a wonderful option to serve. They are also perfect for Sunday brunches or just to make for the kids on a blustery fall morning. Be prepared for them to not last long at whatever occasion you chose to serve them. They are so moist and delicious that they’ll be gobbled up quickly!
This recipe lends itself to a few variations. Follow the directions below to whip up cream cheese filling for your muffins. You can also leave them plain because they are just as delicious without the filling. Ready to make a batch and try them for yourself?
Pumpkin Cream Cheese Muffin Recipe
These pumpkin muffins are so quick and easy to prepare, but they’ll look and taste like you spent hours working in the kitchen to make them. The reality is that they are very simple to whip up and require just a few ingredients that you probably already have on hand in your kitchen.
Pumpkin Cream Cheese Muffins
These delicious pumpkin cream cheese muffins will quickly become a favorite fall treat! They're so quick and easy to prepare, but they'll look and taste like you spent hours working in the kitchen to make them.
Ingredients
Muffins
- 1 box of spice cake mix
- 15 oz. can of pumpkin puree
- 2 teaspoons pumpkin spice
- brown sugar optional
Filling
- 6 oz. cream cheese softened
- 2 tbsp. granulated sugar
- 2 tbsp. milk
- 2 tsp. vanilla extract
Instructions

In a large bowl, blend together the cake mix, pumpkin puree, and pumpkin spice.

Spoon the batter into a muffin tin that has been prepared with muffin liners or misted with cooking spray. You should have enough batter for 12 large muffins.

If desired, add a sprinkling of brown sugar to the top of the muffin batter. It will bake into a sugary crumble.

Bake the muffins at 350 degrees for 20-25 minutes.
Cream Cheese Filling

While the muffins are cooling, mix up a batch of cream cheese filling. To prepare the filling, combine cream cheese, sugar, milk, and vanilla into a bowl and mix until it goes from being watery to smooth and creamy.

Use a cake decorating tip (Wilton #230 works great!) and icing bags to fill each muffin with a generous amount of cream cheese filling. Simply insert the decorating tip down into the center of the muffin and squeeze some of the cream cheese inside.
