Even though it’s still just the beginning of September, I’m in full fall mode. I’m not usually much of a baker, but as soon as summer vacation is over, I can’t get enough of all of those apple and pumpkin recipes. Fall has such a distinctive flavour – cinnamon, cloves, pumpkin spice, nutmeg – and nothing makes it feel more like fall than the delicious scent of these pumpkin chocolate chip cookies baking in the oven.
Pumpkin Chocolate Chip Cookies Recipe
Pumpkin Chocolate Chip Cookies
These delicious pumpkin chocolate chip cookies are so moist and chewy. They're the perfect taste of fall and are always a hit!
Ingredients
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 3 cups all purpose flour
- 1 cup quick cooking oats
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 2 cups semi-sweet chocolate chips
- 1 cup canned pumpkin puree
Instructions
-
Preheat the oven to 35o F. Grease cookie sheets or line with parchment paper.
-
In a bowl, cream the butter and sugars until light and fluffy. Beat in the egg and vanilla.
-
In a large bowl, whisk the flour, oats, baking soda, salt and spices. Slowly beat into the creamed mixture alternating with the pumpkin puree. Fold in the chocolate chips.
-
Dropped batter by tablespoonfuls onto the baking sheets. I always like to top the cookies with a few extra chocolate chips to make them look prettier. Bake at 350 degrees for approximately 15 minutes until the cookies are browned around the edges. Allow to cool for a few minutes on the baking sheets and then transfer to wire rack to cool completely.
How to package cookies for gifts.
If you want to package up the cookies for a sweet fall gift idea, just grab some mason jars and a fall napkin or scrap material. A cute fall cupcake liner also works well. Use a small plate as a template to cut a circle in the napkin or material. Place the cookies in the mason jar, put on the lid, and then add the napkin and screw on the rim. To add a personal touch, grab this free printable pumpkin season tag and tie it to the jar with some twine.
I hope you enjoy these pumpkin chocolate chip cookies! If you like nuts, try adding some walnuts or pecans. Personally, I love the nuts, but I made these ones for the kids who prefer nut-free. The things we do for our kids! 😉
