Well the start of fall is now officially here!! It is time for sweaters, pumpkin patches, cozy nights by the fire and {one of my favorite fall activities} apple picking!!! The boys and I have already been a couple of times this year and I always find it fun to pick a few different varieties to compare flavors. There is just something about being able to pick it right off the tree….
Anyways, since we have had so many apples around here lately, I thought that I would have a little applefest week {which might end up being more like a week and a half!} here on the blog. I have lots of apple ideas to share with you so I hope you join me. First up are these cute little mini pies in a jar!
Ingredients
- 12 8 oz. wide-mouth canning jars
- 10 cups chopped apples {peeled and cored}
- 2 cups raspberries {you can always another couple of apples if you do not have raspberries}
- 3/4 cup granulated sugar
- 3 tbsp. coranstarch
- 1 1/2 tsp vanilla extract
- 1 package frozen pie crust dough
- 1 egg white {beaten}
To Make
- Preheat the oven to 350F. Spray the jars lightly with cooking spray and place on a foil-lined baking sheet.
- In a large bowl, combine apples, raspberries, sugar, cornstarch, and vanilla. Divide among the jars. The fruit should be filled right up to the top as it will drop during baking.
- On a lightly floured surface, unroll the dough and cut out dough rounds using the lid of the mason jar. {Depending on how many jars you do, you will likely have to re-roll the dough scraps to make your last couple of rounds}. Using a knife, cut an ‘X’ in the middle of each dough round to vent.
- Place one round on top of each jar, fluting the edges to seal it to the top of the jar. Brush dough with the egg white.
- Bake for 40-45 minutes or until filling is bubbly and the crusts are golden. Let cool on a rack.
Although these little pies looked pretty cute on their own, I thought that it might be fun to dress them up a bit. In celebration of the new season, I created some tags and tied them around the top of the jar. You just need to put the lid on, and you have a perfect yummy gift! For the jar in the back, I just punched out some green scrapbook paper with a 3 inch punch {I promise that the green is not so bright in real life!!}, added the tag to the top, and put some washi tape around the sides of the lid. Super quick and easy!
