Summer Simplicity Series
Although summer hasn’t quite officially arrived, I am totally in summer mode. Today I’m joining Krista from The Happy Housie for her seasonal simplicity summer series. Each week this month, we’ll be sharing our favorite summer ideas to help you celebrate summer in style. We’re kicking it off today with our favorite summer recipes, so get ready for some delicious summer treats. You can find all of the summer recipes at the end of the post – don’t miss out!
Meringue Berry Trifle
I’m definitely a summer girl at heart. I love the weather, I love the laid back vibe, and I LOVE the food! It’s always so nice to have access to so many fresh fruits and vegetables, and I always look forward to berry season. This berry trifle is easy to put together and makes a fun summer dessert. You could use any berries you would like but I love the combination of strawberries and raspberries.
Berry Meringue Trifle
This delicious berry meringue trifle is the perfect spring or summer dessert recipe. Light and tasty, and easy to whip up for a summer picnic or BBQ.
Ingredients
Cake
- 1 box vanilla cake mix {Will also need ingredients to prepare cake that are listed on the box}
- 8-9 drops red food coloring
Mascarpone Filling
- 2 cups mascarpone cheese
- 1 cup icing sugar
- 1/2 cup whipping cream
- 2 tsp vanilla extract
Berry Topping
- 2 cups strawberries, chopped
- 2 cups raspberries
- extra berries for garnish
- 2 tbsp sugar
- 3 tbsp lemon juice
- 3 4-inch store-bought meringues {You can also use about 12 small meringue cookies}
Instructions
For Cake

Prepare the cake mix as directed on the packaging. Add 8-9 drops of red food coloring and stir. Pour cake mix into a 9x12 cake pan and bake according to the package directions. Allow to cool.
For Mascarpone Filling

Beat together the mascarpone, icing sugar, whipping cream, and vanilla in a medium bowl until smooth. Set aside.
For Berry Mixture

Combine the berries, sugar, and lemon juice in a medium bowl. Lightly smash the berries with a fork to release the juices.
To Assemble the Trifles

Cut up the cake into small bite-sized cubes.

Break the meringues into small pieces.

Add some cake pieces to the bottom of a mason jar. Add a couple of spoonfuls {approximately 1/3rd cup} of the mascarpone filling followed by a small handful of the meringue pieces and then the berries {approximately 1/4-1/3 cup}. Repeat the layering until you reach the top of the jar. Top with a small dollop of the mascarpone mixture and garnish with fresh berries.
These meringue berry trifles are so delicious and make a nice, light summer dessert. The mason jars make them easily portable for picnics in the park or an evening out at the lake. They were a big hit with the whole family and we’ll definitely be making them at least a few more times this summer.
