We all want to give our children healthy food options but this can be a challenging task for those of us with picky eaters. While my boys do eat a fair variety of foods, their likes {and dislikes!} tend to be opposite from each other. And when you throw a vegetarian husband into the mix, creating a healthy meal that everyone enjoys can be a little difficult!
Last week, I headed down to Safeway to pick up a few of my favorite magazines for some “food inspiration”.
With back to school just around the corner, now is definitely the time to come up with some fast and easy dinner ideas! I always find a ton of yummy recipes in these magazines that can easily be adapted to my family’s needs and likes. When it comes to picky eaters, I find that my kiddos are more willing to eat a larger variety of food if they are more involved in the process of preparing it. Offering a couple of different food choices is also a big bonus with them. I loved all of the kabob recipes in the August edition of Real Simple and figured that this would be an easy and adaptable meal idea that everyone could enjoy. I prepared all of the ingredients in separate dishes and just had everyone make up their own kabobs. The kids thought that it was great!
Ingredients
- 1 lb. boneless, skinless chicken breast cut up into approximately 1 inch cubes
- variety of vegetables cut up into equal sized cubes {we used green peppers, red peppers, broccoli, and red onions} **NOTE: Keeping all items of equal size will ensure more even cooking.
- 3/4 package extra firm tofu cut into cubes
- 1lb. small new potatoes.
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- kosher salt to taste
- black pepper to taste
- 3 cloves garlic
- 1/4 cup olive oil
- 1 tsp crushed red pepper
- 3 tbsp crushed oregano {optional} or dipping sauces of choice
- If you will be using wooden skewers, soak them in water for at least 30 minutes prior to threading to reduce burning.
- Heat the grill to medium-high.
- Combine 1/4 cup olive oil, chopped garlic cloves, and crushed red pepper. Season with salt and black pepper.
- Place the cut chicken, tofu, and vegetables into separate dishes and drizzle evenly with the above mixture. Toss to cover.
- Steam potatoes until just tender {approximately 12-14 minutes}. Combine 1 tsp. basil, 1 tsp. oregano, 1/2 tsp onion powder, and 1/2 tsp garlic powder. Add 2 tbsp olive oil and salt and pepper to taste. Toss with potatoes.
- Place all ingredients into small serving bowls or plates and have your kids choose what they would like to place on their kabobs. The boys had to pick at least three pieces of three different items.
- When you are threading your kabobs, leave a small amount of space between items on the skewer so that the heat can circulate evenly. Make sure to leave room at the end of the skewer as well, for easy turning on the BBQ. Use a screwing motion to twist the skewer through the tougher broccoli.
- Lightly oil the grill grate. Grill for approximately 8- 10 minutes turning every 2 – 2 1/2 minutes until the chicken is cooked through. You can brush on a little extra oil if anything is starting to dry out.
- Sprinkle the kabobs with chopped oregano {or other seasoning of choice} or use your favorite dipping sauce for dipping.
**NOTE: The broccoli ended up cooking quite a bit faster than the other ingredients. If you prefer your vegetables less grilled, place the meat on separate skewers so the vegetables can be removed a little earlier than the meat.
Tips for Feeding Picky Eaters
- At least once per week, let your kids help to plan the meal. Kids love to have a feeling of control and this may allow them to be a little more adventuresome. Help them to pick out a menu including at least one food item from each of the four food groups. Keep it fun and mix things up a bit – breakfast food for dinner is always a big hit around here!
- Experiment with texture and size. Often it is the texture of the food that children don’t like as opposed to the taste itself. Try preparing the same foods in different ways to see if your child has a preference. Cut food into different sizes and shapes or use small cookie cutters to make it even more fun!
- Build on the positive and start by expanding on foods that they already like. For example if your child will eat mashed potatoes, try sweet potatoes or baby potatoes. It has also been shown that children are more willing to try new foods if they are paired with something that they already like. For example, give them a new vegetable to try but with their favorite dipping sauce. Introduce only one new food at a time along with another food that they enjoy and are familiar with.
- Respect strong dislikes for certain foods. The goal with picky eaters is to expand the variety of food that they will eat. That being said, they don’t have to like everything. Allow them to pick a few “absolute no” foods that they don’t have to eat {after they have at least tried it a few times}. Again, this gives them a little more feeling of control and lets them know that you are listening to them.
- Have kids pick their own serving portions {within reason}. Remember that kids’ eating can vary quite a bit from day to day. One day they may eat 2 platefuls and the next day they may only want a few bites. This is very typical {especially in younger children} so let them have some control over this. Try having a two bite or three bite rule for each food item – once this is done, it is up to them how much they want to eat. Keep servings small so food is not wasted – they can always have seconds!
- Play with your food! This one might sound crazy, but getting a little messy is one of the ways that little kids learn to eat. Use healthy food to create fun objects or characters {such as this cute apple frog}. My youngest used to love to take a tortilla and “dress it up” with different foods – cheese string for the hair, carrots for the legs, cucumbers for the eyes, etc. – and would gobble everything up in no time. Even if you don’t think that it looks like your best creation, your kids will love it!
- Don’t get stuck in the same routine! It is so easy to fall back on the same few dishes that you know everyone will eat but continue to branch out and try new things – even if it is just one new recipe per week! Look through magazines {such as Cooking Light, Sunset, and Real Simple}, blogs, and cook books for inspiration and don’t be afraid to make a few changes here and there to accommodate your family’s needs.
I think that the biggest thing to remember is that every child is a little bit different and even in the same household, different children may require different strategies. If your child seems to have more extreme sensory issues that are interfering with his or her eating, advice from a pediatrician, nutritionist, or occupational therapist may be helpful. Don’t give up and don’t let your children see you frustrated. You will get there!
