Have you tried a mug cake before? If you haven’t heard of them, they are basically individually sized desserts that you whip up in a mug in the microwave. I know they’ve been around for a while now, but for whatever reason I’ve never tried making any until recently. Let me tell you though – they are SO much fun!
They only take a few minutes to make, you can try a different recipe each night, and they help to control your portion size. I have about ZERO willpower for resisting {multiple servings of} dessert so mug cakes are the perfect way for me to have my treat without going overboard. And this chocolate mug cake recipe is SO good, it’s a good thing that it was portion controlled!
- ⅔ tablespoon butter {melted}
- 1 egg
- 4 tablespoons superfine {caster} sugar
- ½ tsp vanilla
- 3 tablespoons unsweetened cocoa powder
- whipped cream {optional}
- 1-2 chopped strawberries {optional}
- Melt butter in the microwave {about 10-20 seconds}
- In a mug, beat the egg. One by one, beat in the sugar, vanilla, melted butter, and cocoa.
- Cook in the microwave for 1 minute.
- Top with whipped cream and chopped strawberries {or other topping} as desired.
This cake is super rich and SO delicious! AND, it only takes 5 minutes to whip up!
