Whew! We made it through our first week of school! Although this was technically a “short” week with the long weekend on Monday, it has felt like FOREVER!! I am definitely looking forward to this weekend and thought that a sweet treat would be a nice way to end the week!
These little bars are SO good and did not last long!!
Ingredients
Cookie Crust
- 1 bag of chocolate chip cookie mix
- 1/2 cup butter
- 1 tablespoon water
- 1 egg
- 1 cup chopped pecans
**NOTE: In case you are using a different brand of cookie mix than I did, follow directions on your cookie packaging to make up the cookie dough. The amount of butter, water and eggs may vary.
Caramel Filling
- 40 unwrapped caramels
- 1/3 cup whipping cream
- 1/4 cup chopped pecans
Chocolate Topping
- 2 cups milk chocolate chips
- 1/3 cup whipping cream
- 1/4 cup chopped pecans
To Make
- Heat oven to 350F. In a large mixing bowl, stir cookie mix, butter, water, and egg. Mix in the pecans.
- Grease a 9×13 inch pan and press the dough into the bottom of the pan. Bake approximately 19-20 minutes until golden brown. Cool for at least 10 minutes.
- In a microwaveable bowl, combine the caramels and whipping cream. Microwave on high for 2 to 4 minutes stirring at least every minute until the caramels are melted. Stir in the pecans and spread over the cooled cookie crust. Refrigerate for 15 minutes.
- In another microwaveable bowl, combine the chocolate chips and whipping cream. Microwave on 50% for approximately 2 minutes stirring at least every 30 seconds until chocolate is smooth {at the end you may want to stir every 10-20 seconds to avoid overheating}. Pour over the caramel layer and sprinkle with the remaining pecans. Refrigerate for 2 hours before serving.
The bars taste amazing on their own and even better with some vanilla ice cream! If you happen to have any left over, store them covered in the refrigerator. 🙂
