Grilled Berry Crisp
Today, I have a delicious berry crisp recipe for you. This recipe combines two of my summer favorites – fresh summer berries and some good ol’ BBQ time! If you’d rather be hanging out on the patio with the BBQ instead of cooking in the kitchen, this recipe is for you!
This berry crisp recipe blends the sweetness of your favorite summer berries with the slight smokiness you get from the grill. And, the buttery golden oat crumble {and vanilla ice cream!} tops it all off!
Berry Crisp Recipe on the Grill
Those hot summer nights are the perfect time to pull out the grill and hang out on the patio. This decadent berry crisp recipe is quick and easy to make and can even be prepared ahead of time.
Berry Crisp Recipe on the Grill
This simple berry crisp recipe is made on the grill for an easy and delicious summer dessert.
Ingredients
Berry Mixture
- 6 cups berries (fresh or frozen) If using strawberries, use halved berries.
- 1/2 lemon, juice squeezed
- 1/4 cup granulated sugar
- 2 tbsp all-purpose flour
Crumble Topping
- 1 cup quick cooking or old fashioned oats
- 3/4 cup packed brown sugar
- 1/2 cup all-purpose flour
- 1/4 tsp nutmeg
- 1/2 tsp ground cinnamon
- 1/2 cup butter
- ice cream or whipped cream (optional)
Instructions
-
In a medium saucepan, combine the berries, lemon juice, granulated sugar, and 2 tbsp. flour. Cook and stir over medium heat until mixture is thickened and bubbly. Transfer to an 8 inch square disposable cake foil pan.
-
For topping, combine oats, brown sugar, remaining flour, nutmeg and cinnamon in a medium bowl. Using a pastry blender (or just your hands) cut in butter until mixture resembles course crumbs. Sprinkle topping over fruit mixture. Cover tightly with foil.
-
Preheat grill and reduce heat to medium. Place pan on uncovered grill for 20-30 minutes or until fruit is bubbling and topping is crisp. If your grill doesn't have even heat, rotate the pan around for even grilling.
-
Serve warm. Top with ice cream or whipped cream if desired.
Berry Crumble Tips
Here are a few extra tips that you can try…
- You can use a greased cast iron pan instead of the disposable foil tray if you prefer.
- If you’re having company, you can prepare the crumble beforehand and just grill it up when you’re ready to go.
- This recipe can be made with either fresh or frozen berries with any combination you’d like. If you’re using strawberries, be sure to use strawberry halves rather than the full strawberry.
- I’ve tried a little leftovers as a pancake topping and it was really good!
I hope you give this recipe a try this summer!
