Pumpkin season is here again and I have been having fun playing around with some pumpkin recipes. I am always on the hunt for quick and easy dinner ideas that the whole family will love and this baked tortellini with pumpkin sauce definitely fits the bill!
You can serve it up with some salad for an easy and tasty fall meal. You can even skip the baking part if you are in a hurry or substitute your favorite pasta. The creamy pumpkin sauce is one of my fall favorites. Depending on how “saucy” you like your pasta, you may want to slightly decrease the amount of pasta added for a thicker sauce. 🙂
- 1 package refrigerated tortellini {or any other pasta you would prefer}
- 1 tbsp butter
- 1 green onion, finely chopped
- 1 cup whipping cream
- 1 cup canned pumpkin
- ⅓ cup + ¼ cup grated Asiago cheese
- ½ tsp salt
- ¼ tsp nutmeg
- ¼ tsp pepper
- ½ cup dry bread crumbs
- Preheat oven to 350 F. Spray a 2 quart baking dish with nonstick cooking spray.
- Cook pasta according to package directions and drain.
- Over medium heat, melt the butter in a saucepan. Add the green onion. Cook and stir for 2-3 minutes.
- Add the cream, pumpkin, ⅓ cup Asiago cheese, salt, pepper, and nutmeg. Cook and stir over low heat for approximately 2 minutes.
- Place the pasta in the baking dish and and combine well with sauce.
- Combine remaining cheese and bread crumbs together and sprinkle over the pasta.
- Bake for 15 minutes until heated through and the topping is gently browned.

Very skeptical about pumpkin main dishes. This is good. I cut the pumpkin to one cup, just in case. I would hate to throw away a whole casserole if no one eats it. I like it this way, mildly pumpkin. Thank you for sharing.
