I am not actually a big fan of turkey, so for me, Thanksgiving dinner is all about the side dishes {and of course all of the yummy Thanksgiving desserts!} This week I am going to be sharing a couple of my favorite side dishes from our Thanksgiving this year.
I’m all about easy when it comes to preparing holiday meals. This creamy cauliflower gratin is quite simple to prepare and tastes delicious – I love it with stuffing! 🙂
- 1 large cauliflower, chopped
- 2 tbsp olive oil
- 1 large garlic clove, minced
- 2 tbsp flour
- 1 tbsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- 1 cup plain Balkan style yogurt
- 1 cup grated aged white Cheddar cheese
- 1 egg yolk
- ½ cup bread crumbs
- ¼ cup chopped fresh parsley
- ¼ cup grated white Cheddar cheese
- 2 tsp olive oil
- 1 tsp lemon juice
- Preheat the oven to 425F.
- Steam the cauliflower until it is tender when pierced.
- Heat oil and garlic in a skillet over medium-low heat until fragrant. Add flour, mustard, salt and pepper. Cook, stirring for 2 minutes.
- Add yogurt and cook for an additional 5 to 7 minutes until mixture thickens. Remove from heat, stir in cheese until melted. Whisk in egg yolk. Pour over cauliflower and stir until mixed.
- Lightly coat a shallow casserole dish with non-stick cooking spray. Add cauliflower mixture.
- Toss breadcrumbs with parsley, cheese, oil, and lemon juice until combined. Sprinkle on top of cauliflower and bake for 10 minutes or until topping is browned.

I’m not a big fan of turkey either and that’s probably why even when we just have a few people over we have TONS of side dishes. I can never pick just two or three sides and we end up with lots and lots of leftovers. This looks SO good! I’ll definitely be pinning it to try one night.
