Although we still have almost 4 weeks left of summer vacation, I know that many of you are already dealing with the back to school craziness. Back to school time is always a hard transition for me as we go from our laid back summer schedule to the more structured school schedule with homework, extra-curricular activities, and early mornings.
Mornings are definitely not my strong suit, and it’s always a struggle for me to get through my morning routines with my sanity intact. While I always try to make sure that the kids get something healthy to start off their day, we often stick with the same couple of breakfast options. This year, I’m hoping to be more organized and am working on expanding our recipe box.
In preparation for back to school, I’ve pulled together some of our favorite breakfast ideas that we’ve already tried and have been searching for new new quick and easy breakfast ideas as well. Most of these can be at least partially prepared ahead of time and either frozen or stored in the fridge for those hectic mornings. And, of course, there are lots of “grab and go” options, because, honestly, I probably eat my breakfast in the car 75% of the time. 🙂
