Whoohoo! It is our first official day of summer vacation and the start of our Canada Day long weekend! The sun is forecasted to come out this afternoon {and stick around for a while!} and we are SO excited to get going with summer! If you’ve been around her for a while, you know how much I love celebrating the holidays, but spending time in the kitchen during summer is not high up on my list of favorite things to do. So here is a fun {and oh so easy!} summer treat idea that is perfect for Canada Day or the Fourth of July…
Mini Ice Box Cakes

These easy mini ice box cakes are a delicious dessert for summer parties or BBQs. Add a topper for a fun Canada Day or July 4th celebration!
Ingredients
- 1 package chocolate wafers
- 1 cup whipping cream
- 2 tbsp. icing sugar
- 1 tsp vanilla
- diced strawberries or sprinkles
- food coloring {optional}
Instructions
- Beat whipping cream, icing sugar, and vanilla on high speed until thickened. Add food coloring if desired.
- Spread whipping cream over chocolate wafers. Stack in groups of 4.
- Place in the refrigerator for at least 4 hours or overnight.
- Add sprinkles or strawberries just before serving.
- Makes approximately 8 mini ice box cakes.
To make the flag toppers, print out the Canada Printables HERE or the July 4th Printables HERE. Cut out, fold, and notch out the end. Cut paper straws in half and glue on the flags.
I also punched out some patterned parchment paper with a scalloped punch to use as a liner. You could always use scrapbook paper too..
