Is it really August already??? Say it ain’t so!
This summer has been flying by and, after an extremely work-filled July, I’m hoping that August will be more of a chill out and just soak up the summer kind of month. To kick things off, I thought that a yummy, frozen treat was in order – perfect for patio lounging or backyard BBQs. As an added bonus, this one is dairy-free, gluten-free and vegan, so hopefully everyone will be able to enjoy it!
Last month I discovered So Delicious cashewmilk frozen desserts and now have a freezer full of all of their flavors. I think that the salted caramel cluster and dark chocolate truffle are my favorites and mixed together they’re even better! These frozen desserts are certified vegan, soy-free and gluten-free, but taste SO creamy and decadent that you would never know that they’re dairy-free.
These easy frozen parfaits combine your favorite frozen dessert flavors with a creamy, chocolate coconut milk whipped cream, dairy-free mini chocolate chips, and some crushed cashews. You can always switch the toppings up to whatever you prefer – that’s half the fun!
The only thing that really takes a bit of prep is making the whipped cream. From my experience, if you want a consistency similar to real whipped cream, you need to find full fat coconut milk or coconut cream that does NOT have guar gum (or other emulsifiers) added to it. Ideally, you just want two ingredients listed – coconut and water. The guar gum prevents the coconut milk from solidifying in the fridge and will not produce a thick whipped cream. While it still tastes the same, it turns out more liquified. For this particular recipe, it will still work since we will be freezing it afterwards, but if you plan on using the whipped cream as a fresh topping or would like to use the recipe for other desserts as well, make sure your can does not have guar gum listed as one of the ingredients.
Along the same lines, it’s extremely important that the coconut milk is chilled prior to use so that the milk will solidify. If you have a really cold fridge it may be ready in as little as 4 hours, but chilling overnight is preferred. Like with real whipped cream, it’s also recommended to chill the bowl and beaters prior to mixing as well.
- 1 500 mL container So Delicious salted caramel cluster cashewmilk frozen dessert, softened
- 1 500 mL container So Delicious dark chocolate truffle cashewmilk frozen dessert, softened
- ¾ cup crushed cashews
- ¾ cup chocolate chips {I used Enjoy Life brand for a dairy-free option}
- chocolate coconut milk whipped cream
- 1 14 oz. can chilled, full fat coconut milk {preferably without guar gum} or coconut cream {which is sweeter}. Chill for at least 4 hours before mixing or preferably overnight.
- ¼ - ½ cup organic powdered sugar depending on sweetness preferred
- 2 tbsp. cocoa powder or cacao
- Chill the coconut milk or cream overnight. Chill a metal mixing bowl and beaters for 15 minutes in the freezer prior to mixing.
- Remove the lid from the coconut milk without tipping and shaking the can. Scoop out the top thickened cream and leave the liquid behind {you can always save this to add to rice or smoothies}. NOTE: If your coconut milk is still liquid, it likely has guar gum or another emulsifier that prevents it from solidifying. See discussion in blog post.
- Add the coconut milk to the mixing bowl along with the powdered sugar and cocoa powder. Beat for approximately 2 minutes until smooth and fluffy.
- Add a layer of the softened So Delicious frozen dessert to the bottom of your jar and sprinkle with crushed cashews. {NOTE: If you're in a hurry and don't have time to wait for the dessert to soften, you can place it in the microwave for 10-20 seconds}.
- Add a layer of the coconut whipped cream.
- Add a layer of your second flavor of the So Delicious and sprinkle with the mini chocolate chips.
- Add a layer of the whipped cream.
- Add a final layer of the So Delicious and freeze for at least 1 hour. {NOTE: If you still have whipped cream left, it can be kept covered in the fridge for up to 2-3 days. Add to the top of your parfaits when served or use as a topping for fresh fruit or other desserts}.
- Remove the parfaits from the freezer and allow to soften for a few minutes before serving. Top with remaining chocolate chips and crushed cashews and/or remaining whipped cream.
- Makes 6-8 parfaits depending on your jar or parfait dish size.

While I don’t have the nutrition values for the dessert as a whole, a 125ml serving size of the salted caramel clusters has 180 calories, 18g of sugar, 9g of fat, and 3g of protein. I hope that helps!
