I am not a big morning person but I definitely love a good breakfast! Unfortunately, weekday mornings tend to be rather chaotic around here and I am usually lucky if I get a chance to gobble down a bowl of cereal. It always seems like such a luxury when we get a lazy weekend morning to just sit around and enjoy a yummy breakfast. Pancakes are always a big hit in our house and these apple pie pancakes are one of my favorites!
We did these up on our STOK grill but they can easily be done in a skillet as well. We just use boxed pancake mix to keep things simple but feel free to use your favorite pancake recipe. The warm, grilled, cinnamon apples is what really sets these pancakes apart!
- 1 ½ cups pancake mix
- Non-stick cooking spray
- Syrup and/or whipping cream (optional)
- 3 apples, cored and cut into ¼ inch slices
- 1 cup cold water
- ¼ cup lemon juice
- 2 cinnamon sticks (optional)
- 1-2 tbsp butter
- 1 tbsp brown sugar
- ½ tsp cinnamon
- Preheat the griddle insert to medium heat (approximately 300-350F). You can test to see if the griddle is hot enough by placing a few drops of water over it – the water should “dance” and sizzle if it is the correct temperature.
- Cut apples into ¼ inch slices. Combine the water and lemon juice in a mixing bowl and add the apples. Add additional water if needed to cover the apples. For additional cinnamon flavor, add 2 cinnamon sticks to the water.
- Prepare the pancake batter as per the instructions on the box (or use your own recipe). Be careful not to overmix.
- Spray the griddle with non-stick cooking spray and pour batter (approximately ¼ cup). Cook for 3-4 minutes until the underside is golden brown. Flip and cook for an additional 1-2 minutes. Make 8 pancakes.
- Preheat the wok insert to medium heat (approximately 300-350F). Melt butter in wok. Remove the apples from the water mixture and add to the wok. Cook for approximately 8 minutes, turning once. Remove from heat.
- Combine the brown sugar and cinnamon and sprinkle over apples. Top pancakes with apples. Add syrup and/or whipping cream if desired.
These would make a great Father’s Day breakfast this weekend too! Just remember to top them off with some syrup and whipped cream! 🙂
Oh – and the apples taste pretty darn good on their own too if you just want to whip them up for a snack on their own.
